The only thing that could make Chocolate Chip Cookies any better would have to be by adding Spearmint. Yum.

Ingredients
- ½ cup coconut oil
- ½ cup butter
- ¾ cup raw sugar
- ½ cup honey
- 1 tsp cocoa
- 1 tsp molasses
- 1 egg
- 1½ cup spelt flour
- 1½ cup white flour
- 1 cup quick oats
- ¼ cup chia seeds
- 1 tsp sodium bicarbonate
- ½ tsp salt
- 1 cup chocolate chips
Essential oils
- 1 drop spearmint
Instructions
- Preheat oven to 180° C
- Combine refrigerated coconut oil and butter and whisk until smooth
- Once smooth add raw sugar, honey, cocoa, molasses, and egg and mix until creamed together
- In a separate bowl combine spelt flour, white flour, quick oats, chia seeds, baking soda, and salt. Slowly pour into the liquid mixture while mixing
- Add chocolate chips and mix
- Spoon 12 cookies onto a baking tray and bake for 12 minutes
